Fertility Boosting - Lemon Quinoa Salad⁣

Not everyone has to go Autoimmune Paleo [AIP] to boost their fertility when dealing with infertility! The AIP diet is not a “diet” you should be on for a long time if you don't have to be!! ⁣⁣The main goal of the AIP diet is to help dramatically lower your Inflammation quickly and help you find hidden food intolerances, which is one of the most important things you should do when boosting your fertility.⁣⁣

Here's one of my favourite salads that our friends over at @functionalself taught me to make after he suggested we change up our diet to improve our situation almost 9 years ago. Not sure we all realise just how dramatic our lives would change after that conversation 😍⁣⁣
⁣⁣
🍋Lemon Quinoa Salad⁣

🦩INGREDIENTS⁣⁣
(2 servings)⁣⁣
1/2 cup of dry quinoa⁣⁣
1 small handful of cranberries⁣⁣
1 small hand ful of pinenuts⁣⁣
1/2 avocado, diced⁣⁣
1 tbsp of olive oil⁣⁣
Juice of 1/2 lemon⁣⁣
1 tbsp of lemon zest [chopped or grated]⁣⁣
large handful of fresh cilantro, chopped⁣⁣
⁣⁣
🦩DIRECTIONS⁣⁣
Prepare the quinoa on the stovetop according to the directions on the packaging.⁣⁣
Toast pinenuts for 3 minutes in oil of choice ⁣⁣
While the quinoa is cooking, combine the rest of the ingredients in a large bowl [include pinenuts after they have cooled done].⁣⁣
Add cooked chicken strips if desired ⁣⁣

Not AIP friendly. Replace with Salad or Soup⁣⁣
